Leftover Special

Here is a casual photo of today’s lunch plate (sorry, no time for any “styling”). So today’s lunch was leftovers . . .but it sure was good! Here is a list of what was on the menu:

  • Leftover fried rice
  • Leftover black beans
  • Leftover potatoes made into a “potato omelette”
  • Ketchup (homemade of course)
  • Fresh tossed salad (Red romaine leaf lettuce, Roma tomatoes, black olives and a sprinkle of olive oil, lemon juice and vegetable seasoned salt.

He are a few tips if you would like to do something similar (tips, because they aren’t really recipes!)

Rice – just brown rice warmed up with a simple stir fry of onions/garlic/grated or finely sliced carrots, and diced green onions. Oh yes, a handful of soy curls rehydrated in chicken-style seasoned broth and lightly browned with just the onions and garlic.

Potato omelette – grated , cold, boiled, organic russet potatoes. Warm them in a small (6″) non-stick skillet in a a small amount of olive oil. When they are good and warm, press them down into the pan with your pancake turner. When it is nice and crisp and golden on the bottom, turn the whole thing over, keeping it in one piece.  Sprinkle with salt and onion powder. When the second side is done, slide it onto a plate. Slice half an onion very thinly and saute in the same pan with just a bit of water and a sprinkle of salt. When the onions are lightly browned, slide them onto the potato and flip half the potato over them. Garnish with ketchup and enjoy!
